I would just vneture to say that in life Skulknight was just a really good mounted fighter, and him being off his mount would take him out of his element.
Oh no doubt, it would be like asking Guts to use a big axe or a hammer. He could definately do massive damage, but not like what he could do with The Dragon Slayer.

Maybe it´s like they will turn out how they unconsciously want to look like... Or maybe it all depends on how bad they want to become an apostle in the end, a tiny bit = A tiny apostle and vice verse.
Or maybe it´s based on how much regret they have when they say who is the sacrifice, if they dont care that much they get real bad ass form as a reward.
