I'm late but I'm kind of disappointed to see people even compare Cowboy Bebop to Evangelion. Nothing to do with it, but I was cool with Final Fantasy 7 even if it's not the best game or RPG ever.
Evangelion not having character development is probably the craziest thing I heard in a while. While they certainly in most cases didn't develop into better characters, there were many dimensions shown and plenty of depth in the main characters. I mean the reason I watched Evangelion in the first place was because of the character interaction.
Cowboy Bebop is a fantastic series yet how can you really compare it to something like Evangelion? The same way you compare Full Metal Alchemist to Yakitate Japan? Samurai Champloo to Hundred Stories? Sure, you may enjoy some more than others but, in my opinion, that's pretty much apples and oranges if you know what I mean.

On the off chance that anyone reading this post hasn't watched Evangelion...Here Be Spoilers, Arrr.
Shinji and Rei specifically have a great deal of Character developement, unless you think End of Eva is canon.
Of course, Rei is killed almost immediately after her character developement is more or less finished, and replaced with a clone that hasn't gone through those experiences and thus is not matured in the same way.
Meanwhile, the bulk of Shinji's character developement occurs in the last five episodes. This is not to say that he doesn't develope before that, but the volume in the last few episodes far outstrips everything previous.
Asuka...doesn't really have much developement at all, nor does Gendo.
Cowboy Bebop does not compare. It's a very fun series, and I enjoyed it thoroughly, but it is as mediocre and middle of the road as an anime series can possible be.

This thread is the reason I don't seriously try to argue with anyone about anything related to the finer details of Evangelion. Either you get it, or you don't, perhaps like Cowboy Bebop. Either you get hung up on the religious symbolism and the weirdly two-dimensional characters, or you dodge those red herrings.
